The Joy of Root Beer Floats

When I was diagnosed with diabetes, I figured I'd had my last root beer float -- a treat I've always liked, even more so after I spent time working for Baskin-Robbins ice cream. But I've found a diet root beer I like called "Teddy's," flavored with Splenda so it doesn't have the bitter taste I associate with other diet root beer. Couple that with no-sugar-added, reduced-carbohydrate Breyer's ice cream, and I can once again enjoy a root beer float.

Now it's not as though I can have them every day, though. Even reduced-carb ice cream has carbohydrates, and one of the artificial sweeteners has a laxative effect if you eat too much of it at once, which acts as a sort of limit on what I can consume. But it's still nice to have a treat I can eat that won't spike my blood sugar.
